Upgrade sqlserver 2008 and 20082 to 2014

I have read several post on the TechNet site and from the SQLServer Upgrade Technical guide on page 97 of 454, it suggests that we cannot perform direct in-place upgrade from a 32-bit edition of sqlserver 2008/2008r2 to any 64 bit edition of sqlserver 2012. However database can be restored or attached to a 64 bit edition of sqlserver 2012. So I am planning to use the technique side by side upgrade. Can this upgrade be done on the same server (existing 2008r2) installing 2014 provided we meet the hardware requirement. Can we choose the default instance name although the default instance name is already defined in 2008r2. Do we have to uninstall 20082 and the services will be deleted after upgrade. We also have fox-pro application, and there are 17 databases.

I can run backup script/detach and attach the database to sqlserver 2014.

There are few linked servers, 10+ jobs, Database Maintenance Plans. It would be great if anyone has a step by step upgrade plan for 2008/2008r2 to 2014.
